I bought this book on a whim at my go-to smoothie place and was surprised by how much I liked it. I don’t have kids but, I’ve been toying with the thought of veganism for years. I guess I figured that if a kid can “deal” with a vegan diet, an adult can at least give it a try? (The cute little kid on the cover is even eating a cupcake!) I loved the 5 days of vegan meals. I’m not a fan of cooking so I combed through for the easiest recipes and liked the “tuNOT” salad and stuffed peppers the most. Over the past few weeks, I’ve been trying to “veganize” the foods I eat anyway and have actually been enjoying the challenge. I am by no means a perfect vegan but, I’m eating a lot better and heading in the right direction. Vegan cupcakes, here I come.
